I declared my fondness for the sausage, egg and cheese on a bagel sandwich in my previous post about making breakfast sausage patties. Now after you made the sausages it’s time for the Grand Sandwich, and you know you want a piece of that.
This sandwich is actually inspired by McDonald’s sausage, egg and cheeses, and I know it’s fast food, but that’s why I decided to start making my own. After all there is nothing wrong in making a fast food staple at home the healthier way.
To make this sandwich all you need is a bagel, a sausage patty, 2 eggs, 2 slices of cheese, and the sauce (creamy dill mustard and mayo).
As you can see from the photo I already toasted the bagel and cooked the sausage, but there is a better way of doing this.

First you should make the sauce by combining 1 teaspoon of creamy dill mustard with 3 teaspoons of mayo (multiply this by the number of sandwiches you’re making). Set it aside, and start preheating a pan on medium low and if you’re like me and toast your bagels in the broiler, set that to high.
Start cooking the sausage until it’s done and no longer pink, but while it’s cooking beat two eggs, and broil the bagel halves for 30 seconds to a minute or until nicely toasted. Then smear the sauce on both halves of the bagel and put the cheese on both halves as well. Once the sausage is done place it on the bottom half of the bagel, and start cooking the eggs.
The easiest way to cook the egg would be to use a small pan with a cooking surface equal or about the size of the bagel, but you can always fold the eggs. I simply cook the eggs on a 10 inch pan and fold the edges to make it a square.
Once done place the eggs on the sausage and cover with the top half. Now you either dive in or warm up the sandwich in the oven (if you used a broiler to toast the bagel the oven will still be hot enough to warm up your sandwich)

Ingredients:
1 bagel sized sausage patty (My Recipe)
1 bagel
2 eggs
2 slices of cheese
3 teaspoons of mayo
1 teaspoon of creamy dill mustard
salt, pepper
Quick Directions:
1. Cook the sausage
2. Toast the bagel
3 Cook the eggs
4. Assemble in the order: bottom bagel half, sauce, cheese, sausage, eggs, cheese, top bagel half.
